Tasty Tuesday




Since zucchini is abundant around this time of year, here is a great
zucchini bread recipe given to me by my cousin, Jill.

I have been making this for a church cafe recently and everyone seems to love it. Baking these kinds of breads in the U.K. is apparently not that popular which is why they enjoy it I guess. My whole family loves when I make it, too, and so do I. :-) 







Zucchini Bread:
2 c. sugar 2 t. baking powder
1 c. oil or applesauce 2 t. cinnamon
2 c. zucchini 2 t. baking soda
4 eggs - beaten 1/2 t. salt
3 c. flour 1 t. vanilla

Mix salt and zucchini and set aside. Combine dry ingredients together then add eggs, oil, and vanilla. Fold in zucchini, pour into two loaf pans and bake at 350 degrees for 55 minutes.

I love it...some of the most popular items at our bake sales were banana bread and pumpkin bread....just not alot of those in the UK.

Hi! I actually made this zucchini bread this week here in Texas! It was a favorite of my mom's. Been busy here canning salsa with homegrown tomatoes. Please stop by sometime.
